Since the fall season just isn’t complete without apple pie, I made these little apple pie rounds. This is a quick and simple variation of a classic apple pie, just in smaller serving pieces.
You will need:
1 package of store bought pie dough
1 large Granny Smith apple
1 Tbsp all purpose flour
2 Tbsp granulated sugar
1 Tbsp brown sugar
1/2 tsp cinnamon
1/4 tsp nutmeg
dash of salt
To make:
Preheat your oven to 350 degrees F.
Peel and finely dice the apple. Since this is not your traditional apple pie and you’ll be working with smaller pieces of dough, it’s important that the apple pieces are very small. In a small mixing bowl, blend together the sugars, flour, cinnamon, nutmeg and salt. Pour mixture over the apple and coat all the slices well.
Using a 2 1/2″ round cookie or biscuit cutter, cut 8 rounds from each piece of the pie dough (16 rounds total). Put 8 rounds on a baking sheet and place a large spoonful of the apple mixture on top of each dough round. Top with the remaining 8 pieces of dough rounds and pinch the sides together to create a mini pie round. Brush each top with a little milk and sprinkle with just a little bit of sugar. Cut 3-4 small slits into the top of the dough. Bake at 350 degrees F for about 20-23 minutes, or until golden brown. Cool completely before serving and enjoy.
Note: You can also use a home-made pie dough if you prefer it over the pre-made dough.
