When thinking about the first recipe to share, needless to say my “Pumpkin Raisin Spice” cookies were at the top of the list. There are dozens upon dozens of pumpkin spice cookie recipes out there. This recipe is my own, tried and tested in my kitchen. It takes a little bit of that, a little bit of this and a dash of that. They are the perfect little bite size cookie for an afternoon treat or dessert. Enjoy!
You will need:
3 cups all-purpose flour
1 tsp baking powder
1 tsp baking soda
1 1/2 tsp ground cinnamon
1 cup granulated sugar
½ cup light brown sugar
¾ tsp nutmeg
1 stick (1/2 cup) butter at room temp (preferably unsalted, but salted will work)
2 eggs
¼ tsp kosher salt
1 ½ tsp vanilla extract
1 15 oz. can pure pumpkin (not pumpkin pie filling)
1/3 cup seedless raisins
1 cup confectioners’ sugar
2 tablespoons milk
To make:
Preheat your oven to 350 degrees F
In a medium bowl combine flour, baking powder, baking soda, kosher salt, cinnamon, and nutmeg. In a large bowl combine granulated sugar and light brown sugar. Cut stick of butter in to 8 pieces and blend with sugar. Add pumpkin, eggs and vanilla extract to sugar/butter mixture. Blend well. Gradually blend in flour mixture (I usually add ½ cup at a time). Once blended, stir in raisins. Drop by spoonfuls on to cookie pans. I use dark coated pans and don’t grease them, but you may lightly grease your pans if you know they stick. I like to use a small 2 tsp cookie dough scoop for this recipe. Drop the dough by scoop onto the baking sheets. Bake for 12-14 minutes. Remove to wire cooling rack or foil/wax paper lined counter and let cool. When cool, swirl sugar glaze over cookies (glaze directions below).
Sugar Glaze:
1 cup confectioners’ sugar
2 tbsp milk
Mix milk into confectioners’ sugar until smooth. Add glaze to piping bag or zip bag, cut end and swirl over cookies.
Using a small cookie dough scoop I get approximately 45 bite size cookies from this recipe. Using a large cookie dough scoop I get approximately 20 cookies.

These cookies are amazing. You and Jack did a great job when you made them last weekend. I brought some into work and everyone was raving about them. One of the secretaries said that she typically does not like pumpkin and she tried these and loved them.
