One of my favorite Fall flavor combinations is apples with cheddar cheese. I know at first this flavor combination may not sound all that appealing, but just trust me on this one! For these Apple Cheddar Bruschetta Bites I used a Red Delicious apple and 2 year-aged cheddar.
You will need:
1 fresh baguette
Olive Oil
1 apple (pick your favorite)
3/4 cup shredded cheddar cheese
1/4 cup chopped walnuts (optional)
To make:
Slice the baguette into thin serving size pieces and brush top side up with a little olive oil. Peel and dice the apple into small pieces. In a medium mixing bowl, mix the diced apple with 3/4 cup shredded cheddar cheese. If desired, add in the walnuts. On a foil lined baking sheet, spoon the mixture onto the baguette pieces. Bake at 350 degrees F for 8-11 minutes depending on desired level of crispiness in the baguette slices. Serve warm and enjoy!
