I recently received a beautiful gift basket full of many fall goodies, including fresh picked apples and pears. I put them both to good use by creating this Apple Pear Cranberry Tart. Trust me when I say there won’t be any left overs on this dish!
You will need:
1 roll store bought pie dough or ½ of a home-made pie dough crust rolled out
2 medium sized apples
1 pear
½ cup whole cranberries
1/3 cup granulated sugar
3 tbsp enriched flour
¼ tsp nutmeg
½ tsp cinnamon
1 tbsp butter
1 egg -or- 1 tbsp of milk
4 oz cream cheese
2 tbsp confectioners’ sugar
½ tsp vanilla extract
To make:
Roll out the pie dough into a lightly greased 8 or 9” pie dish. Peel and thinly slice the apples & pear and combine with the cranberries in a mixing bowl. In a small mixing bowl, combine the granulated sugar, flour, nutmeg & cinnamon. Toss the fruit with the sugar, flour & spice mixture to coat the entire batch. In a small mixing bowl, soften the cream cheese and mix in the confectioners’ sugar and vanilla extract. Spread the cream cheese mixture evenly into the bottom of the pie dish. Top with the fruit mixture. Cube 1 tbsp butter into 6 small pieces and place over fruit topping. Fold the sides of pie dough inwards to make a round tart. Brush the outside of the exposed dough with milk or an egg and sprinkle with a little bit of granulated sugar. Bake at 375 degrees F for 30 min. Serve on its own, or with a little caramel sauce topped with whipped cream or vanilla ice cream.
