This simple salad with dried fruit, nuts & goat cheese is my current food obsession. The blended flavors are just so good and it’s super quick & easy to make! As always, I tend not to be “by the book” on any salad with a green base, but the below measurements are a guide of what I used for a single serve salad. Adjust appropriately depending on the size you’re making/number of servings you want.
I used:
2 1/2 cups field greens
4 dried apricots chopped
1 Tbsp dried cranberries
1 Tbsp chopped cashews
1 Tbsp chopped almonds
1 Tbsp crumbled goat cheese
Top with a poppy seed or balsamic dressing and serve. Enjoy!
