I must admit that despite seeing signs of fall all around already, and always looking so forward to the start of the new season, with 80+ degree temps and high humidity in Western New York this weekend I’m really not all that inspired to break out the slow cooker and baking sheets just yet. I could not however resist buying a gallon of fresh pressed apple cider while shopping for groceries early this morning. There was a gentleman putting the first batch of the season in the coolers as I was walking through the produce section and I just had to buy one. Since the summer crops are still producing some beautiful fruit, I also couldn’t resist throwing a few fresh juicy local peaches in my cart. So to kick off this hot start to Pumpkins & Spice 2013, I made a refreshing Peach Apple Cider Slush.
You will need:
2 cups apple cider
1 large fresh peach, skin removed and chopped into small pieces
8-12 full size ice cubes
Directions:
In a blender, pour the 2 cups apple cider, add the ice and chopped peaches. Blend well for about 15-20 seconds or until ice is blended in. Serve up with a decorative paper straw for a little fun twist and peach slice for garnish if desired. Serves up 2 large servings, or 4 small servings.
